Dinner Suggestions?

I am feeling uninspired… I need healthy and somewhat kid-friendly dinner ideas. What should I make?

  1. Do your kids like Mexican? One of our simple go-to meals is a tortilla smeared with refried beans on one side, (usually buy Anne’s organic vegetarian), cheese on the other side, and then fill with spinach and FRESH [mild] salsa. Fold in half and cut in two. My kids love those. We always have a bag of corn chips and guac, too. You can also add ground beef/turkey with taco seasonings if you want.

  2. yeah quesadillas are a favorite by us. also crustless spinach quiche is pretty easy and always gobbled up.

  3. A mixture of the 2 previous comments, my kids enjoy breakfast burritos. Eggs, black beans, cheese, salsa, sour cream – all in a tortilla. It’s yummy.

  4. Tortilla soup in crock-pot: 5 c chicken broth, 1 can pinto beans, 1 can black beans, 1 can sweet corn, 1 can Rotel chiles & tomatoes, 1 chopped onion, 1 diced green pepper, 2-4 cooked chicken breasts (diced).

    Chickpea curry: 1 can chickpeas, 1 can diced tomatoes, 1 can coconut milk, 1-2 tsp curry powder, 1/2 tsp salt, 1/2 onion, 2 carrots, some frozen peas. Simmer 20 minutes, serve over rice, garnish with peanuts and basil.

    Baked sweet potatoes with broccoli, cheddar cheese, and stir-fried peppers and onions

    Lentils and rice: 1 c lentils, onion, carrots, 1 can diced tomatoes, 1 tsp salt, and rosemary. Boil on stovetop until cooked (add water/broth if it gets dry), serve over rice.

    Quick burritos: Mix together 1 1/2 c cooked rice, 1 can black beans, 3/4 c salsa. Fill tortillas, add shredded cheese, microwave. Add any other toppings you want, then serve.

  6. My boys like PW’s spicy shredded pork. (It isn’t spicy.) We eat it either as bbq sandwiches or with mexican toppings on tortillas. I make homemade macaroni and cheese a lot. It makes 2 and so I freeze one for later. We have breakfast for dinner often. Maybe you could let the girls top their own pizzas? My boys like that. There are tons of great recipes in Pam Anderson’s cookbook, “Perfect Recipes for Having People Over”. You might check it out of your library to see if you like it. Hope this helps. Sometimes it is a conundrum to know what to make for dinner. :)
