I made the butternut squash risotto the other day. It took some time and I burned my hand, but it was worth it. Very delicious! Jonathan doesn’t care for vegetables period, so when I offered it him, he looked at me like I was trying to kill him. But I enjoyed it for several lunches and dinners – more for me!
